Total: 40 mins
Serves: 4

Ingredients

  • 4 chicken breasts
  • 1 small head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • 2 tbsp lemon juice, plus lemon wedges, to serve (optional)
  • 2 cloves garlic, minced
  • 2 tbsp Opies capers, drained
  • 1 tsp dried thyme
  • salt and pepper, to taste
  • pomegranate seeds and parsley, to garnish (optional)

Method

  • Step 1

Preheat the oven to 200°C/180°C fan/gas mark 6 and place the chicken breasts and cauliflower florets onto a lined baking tray.

  • Step 2

In a small bowl, mix together the olive oil, lemon juice, minced garlic, capers, thyme, salt and pepper. Pour the mixture over the chicken and cauliflower and use your hands to massage it in, ensuring they are well coated.

  • Step 3

Place in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cauliflower is tender and golden brown.

  • Step 4

Once cooked, remove the tray from the oven and let it cool slightly before serving. Garnish with pomegranate seeds, parsley and lemon wedges, if using.
