Ingredients
- 5 tbsp self-raising flour
- 2½ tbsp caster sugar
- 1 small egg
- 2½ tbsp milk
- 2½ tbsp vegetable oil
- 1½ tbsp La Vieja Fábrica thin-cut marmalade, plus extra for the centre and to serve
- ice cream, to serve
Method
Step 1
In a large microwave-safe mug, mix together the flour and caster sugar.
Step 2
Add the egg, milk and vegetable oil and stir until smooth and lump-free. Stir through the marmalade until evenly distributed.
Step 3
For a gooey marmalade centre, spoon an extra teaspoon of marmalade into the middle and gently cover with a little batter.
Step 4
Microwave on high for 1½-2 minutes, depending on the power of your microwave, until the cake has risen and is just cooked through.
Step 5
Leave to stand for 1 minute. Serve with a spoonful of warmed marmalade and ice cream.
