Pistachio and dark chocolate biscotti

Ingredients

  • 250g plain flour
  • 2 tsp baking powder
  • 150g caster sugar
  • 100g chopped pistachios
  • 2 eggs, beaten
  • 100g dark chocolate, melted

Method

  • Step 1

Preheat the oven to 190°C/170°C fan/gas mark 5. Combine the flour, baking powder, caster sugar and pistachios in a bowl. Add the eggs and mix into a stiff dough.

  • Step 2

Divide the dough into three pieces and form into log shapes – about 4cm wide and 2cm high. Place on a lined baking sheet and bake for 20 minutes. Once cool enough to handle, cut crossways into 1cm slices using a serrated knife.

  • Step 3

Return them to the baking sheet in a single layer and cook for another 15 minutes until golden brown and dry.

  • Step 4

Remove from the oven and allow to cool completely before dipping the biscuits into the melted chocolate and leaving them to set on a wire rack.
